Ingredients

  • 1 cup mashed ripe banana (about 2 medium bananas)
  • 1/2 cup almond butter
  • 1/4 cup maple syrup
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup coconut flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup chocolate chips (optional, but why not?)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8x8-inch pan with parchment paper.
  2. In a large bowl, mash the bananas until smooth. Stir in almond butter, maple syrup, eggs, and vanilla.
  3. Add coconut flour, baking soda, and salt. Mix until just combined.
  4. Fold in chocolate chips if you’re using them. The batter will be thick, that’s normal.
  5. Spread batter evenly in the prepared pan.
  6. Bake for 25–28 minutes, or until the edges are golden and a toothpick comes out clean.
  7. Cool completely before slicing into squares (hardest step, I know).
