Ingredients

  • 300g pasta (penne or rigatoni)
  • 2 chicken breasts, cooked and diced
  • 1 tbsp olive oil
  • 1 red bell pepper, diced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 200g cream cheese
  • 200ml heavy cream
  • 150g grated mozzarella cheese
  • 2 tbsp Cajun seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Cook pasta according to package directions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil and sauté onion, bell pepper, and garlic until soft.
  4. Add diced chicken and sprinkle in Cajun seasoning. Stir well.
  5. Lower heat and stir in cream cheese and heavy cream until smooth and creamy.
  6. Add pasta to the sauce and mix everything together.
  7. Pour mixture into a baking dish and top with mozzarella cheese.
  8. Bake uncovered for 20 minutes, or until cheese is bubbly and golden.
  9. Garnish with fresh parsley and serve hot.
