Ingredients

  • 12 oz penne pasta
  • 1 tbsp olive oil
  • 1 lb chicken breast, diced
  • 1 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 small onion, diced
  • 1 red bell pepper, chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 8 oz cream cheese, softened
  • 1½ cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta according to package instructions, drain, and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add the chicken, Cajun seasoning, and garlic powder. Cook until the chicken is browned and fully cooked.
  4. Toss in the onion and red bell pepper. Cook for about 4 minutes until softened.
  5. Pour in the chicken broth and heavy cream. Stir in the cream cheese until fully melted and smooth.
  6. Add the cooked pasta to the skillet and stir until everything is coated.
  7. Mix in 1 cup of mozzarella and all of the Parmesan cheese. Stir until combined.
  8. Transfer the mixture to a greased 9x13-inch baking dish. Top with the remaining ½ cup of mozzarella cheese.
  9. Bake uncovered for 20 minutes, or until the top is bubbly and golden.
  10. Garnish with chopped parsley and serve warm.
