Cheesy Dynamite Chicken Buns for Quick Breakfast Ideas

I have a bit of a love affair with quick breakfast ideas that double as crave-worthy snacks or even easy dinners. These Cheesy Dynamite Chicken Buns check all the boxes. The buns bake up golden and crisp, hiding a rich, creamy chicken filling that’s spiked with a bit of heat and loaded with cheesy goodness. I made these once for a brunch get-together, and let’s just say the tray didn’t make it past the first round of coffee. They’re perfect if you’ve got leftover chicken or just want something that looks way fancier than it actually is. Whether you’re on the hunt for new Breakfast Ideas, dreaming about something like a dynamite shrimp recipe but chicken-y, or just obsessed with bread buns recipes like I am, this is the way to go. These buns hold their own at the dinner table too—think of them as your new favorite dinner buns recipe with a serious Cheesy Baked Chicken twist.

Ingredients

  • 2 cooked chicken breasts, shredded
  • 4 tablespoons mayonnaise
  • 2 tablespoons sriracha or chili sauce (adjust to taste)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 12 soft dinner rolls or buns
  • 2 tablespoons melted butter
  • 1 teaspoon dried parsley (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking tray with parchment paper.
  2. In a bowl, mix shredded chicken, mayo, sriracha, garlic powder, onion powder, salt, pepper, and mozzarella. Set aside.
  3. Slice the tops off the buns and carefully hollow out the centers without breaking the bottoms.
  4. Spoon the spicy cheesy chicken mix into each bun. Press the tops back on.
  5. Brush each bun with melted butter and sprinkle with parsley if you like.
  6. Bake for 15 to 20 minutes until the tops are golden and the filling is hot and gooey.
  7. Cool for a few minutes before serving—if you can wait that long!
