Ingredients

  • 2 boneless skinless chicken breasts, sliced
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 8 oz fettuccine pasta
  • Salt and black pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Toss chicken with Cajun seasoning until well coated.
  3. In a large skillet over medium-high heat, heat olive oil. Add chicken and cook until browned and cooked through. Remove and set aside.
  4. Reduce heat to medium. Add butter to the same skillet, then sauté garlic and bell peppers until softened.
  5. Pour in heavy cream and stir in Parmesan cheese. Simmer for a few minutes until thickened.
  6. Return chicken to the skillet. Add cooked pasta and toss everything together until evenly coated.
  7. Season with salt and black pepper. Garnish with parsley if you like.
