Ingredients

  • 2 whole salmon fillets (about 1 ½ lbs each)
  • 2 lemons, sliced
  • 4 cloves garlic, minced
  • 1 medium red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • ½ cup Kalamata olives
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or lightly oil it.
  3. Place the salmon fillets skin side down on the prepared sheet.
  4. Drizzle with olive oil, then rub with minced garlic, oregano, salt, and pepper.
  5. Arrange lemon slices, onion, tomatoes, and olives over and around the salmon.
  6. Bake for 20–25 minutes, or until the fish flakes easily with a fork.
