Set up a breading station with three bowls: flour in one, whisked eggs in another, and a mix of parmesan, garlic powder, paprika, salt, pepper, and panko in the third.
Dip chicken strips first in flour, then eggs, then coat in the parmesan mixture.
Place coated chicken on the baking sheet and drizzle or spray lightly with olive oil.
Bake for 18–20 minutes, flipping halfway, until golden and cooked through.
Serve warm, topped with chopped parsley and extra parmesan if you like.
