Ingredients

  • 4 boneless skinless chicken breasts
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup shredded mozzarella cheese
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup balsamic glaze
  • Fresh chopped cilantro or basil (optional, for garnish)

Instructions

  1. Preheat your grill to medium-high heat. Brush grates with oil or spray with cooking spray.
  2. Pound the chicken breasts to even thickness. Rub them with olive oil, then season both sides with paprika, garlic powder, onion powder, salt, and pepper.
  3. Grill chicken for 6–7 minutes on each side or until cooked through.
  4. During the last 2 minutes of grilling, sprinkle mozzarella evenly over each piece of chicken. Close the lid to melt the cheese.
