Heat olive oil in a large skillet over medium heat. Add onion and cook until soft.
Stir in garlic and cook for another 30 seconds.
Add the ground beef, breaking it up with a spoon, and cook until browned.
Toss in the potatoes, paprika, salt, and pepper. Stir well.
Pour in the beef broth, cover, and let simmer until the potatoes are fork-tender, about 20 minutes.
Remove the lid, stir, and let any excess liquid cook off for a few minutes.
Sprinkle with fresh parsley before serving.
