Ingredients

  • 2 cups almond flour
  • 1/3 cup butter, melted
  • 2 tbsp granulated sweetener
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sweetener
  • 3 large eggs
  • 1/2 cup sour cream
  • 2 tsp vanilla extract
  • 2 tbsp instant coffee granules, dissolved in 2 tbsp hot water

Instructions

  1. Preheat your oven to 325 F and grease a springform pan.
  2. Mix almond flour, melted butter, and 2 tbsp sweetener. Press firmly into the bottom of the pan.
  3. Beat cream cheese until smooth. Add sweetener, eggs, sour cream, vanilla, and coffee. Blend until creamy.
  4. Pour the filling over the crust and smooth the top.
  5. Bake for 50-55 minutes until edges are set but the center jiggles slightly.
  6. Cool completely, then refrigerate for at least 4 hours before serving.
