Ingredients
2 cups frozen chopped spinach, thawed and squeezed dry
2 eggs
1 cup breadcrumbs
1 cup crumbled feta cheese
1/2 small onion, finely chopped
2 cloves garlic, minced
Salt and pepper, to taste
Olive oil, for frying
Instructions
In a large bowl, mix the spinach, eggs, breadcrumbs, feta, onion, garlic, salt, and pepper until well combined.
Shape the mixture into small patties using your hands.
Heat a thin layer of olive oil in a skillet over medium heat.
Fry the patties in batches for about 3–4 minutes on each side or until golden brown and crispy.
Transfer to a paper towel-lined plate to drain excess oil. Serve warm or at room temperature.
