Season chicken breasts with salt and pepper on both sides.
Heat olive oil in a large skillet over medium heat.
Place chicken in the skillet and cook for about 6–7 minutes per side, until golden brown and cooked through.
In a small bowl, whisk together honey, soy sauce, and minced garlic.
Pour the honey-garlic mixture over the chicken in the skillet.
Cook for another 2–3 minutes, spooning the sauce over the chicken until it thickens slightly.
Remove from heat, garnish with fresh parsley, and serve warm.
