Ingredients

  • 1 slice of sourdough bread (or your favorite bread)
  • 1 large egg
  • 1/2 ripe avocado
  • Salt, to taste
  • Pepper, to taste
  • Chili flakes (optional)
  • Olive oil (optional)

Instructions

  1. Bring a small pot of water to a boil. Once boiling, gently lower in the egg and set a timer for 6.5 to 7 minutes for a jammy yolk.
  2. While the egg cooks, toast your bread until golden brown.
  3. Slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it gently with a fork and season with salt and pepper.
  4. When the egg timer goes off, transfer the egg to a bowl of cold water. Let it sit for a minute or two, then carefully peel.
  5. Spread the mashed avocado on your toast. Slice the egg in half and place on top of the avocado.
  6. Sprinkle with extra salt, pepper, chili flakes, and a drizzle of olive oil if you’re feeling fancy.
  7. Enjoy immediately while the egg is still warm!
