Ingredients

  • 4 bone-in pork chops
  • 1½ pounds baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Chopped parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, mix garlic powder, onion powder, paprika, Italian seasoning, salt, and pepper.
  3. Toss the potatoes in half the olive oil and half the seasoning mix. Spread them out on a large sheet pan.
  4. Roast the potatoes for 10 minutes.
  5. While the potatoes roast, rub the pork chops with the remaining oil and seasoning.
  6. After 10 minutes, move the potatoes to one side of the pan. Add the pork chops to the other side.
  7. Roast everything together for another 20 minutes or until the pork is cooked through and the potatoes are tender.
  8. Let rest a few minutes, sprinkle with parsley, and serve.
